Directions:In large mixing bowl mix sugar and butter and beat till pale and creamy. In separate bowl mix remaining dry ingredients, whisk to mix and set aside. Add eggs one at a time to the butter mixture, mixing briefly. Add vanilla with last egg. Add dry ingredients in a steady stream with a mixer or by hand. Use only enough to incorporate all the flour, do NOT over mix. Divide dough into 1/2 c balls. Flatten into a discs, cover with plastic wrap and refrigerate for 2 hours. Place plastic wrap on plastic cutting board, put one disc on board and cover with another piece of wrap. roll out thinly, put in freezer while you process the rest of the balls in the same manner. Keep all dough and board in freezer overnight. DAY 2 Line cookie sheet with parchment or use silpat sheet. DO NOT USE COOKING SPRAY. Using cutting board, take out first dough sheet from freezer. Remove top layer of wrap and turn over using cutting board to support. Remove 2nd wrap and cut out shapes. wrap trimmings and return to fridge. Place cutting board back into freezer while decorating cookies. Continue till dough sheets are done, then treat trimmings as you did the original dough. Roll the excess trimmings from this step into a sheet and cut in squares. Bake at 325* for 7-10 minutes, till the edges are just turning brown. Remove liner with cookies to a cooling rack, remove from liner after 2 minutes. |
