1 cup brown sugar
1 tsp. vanilla extract
2 cups pecans, halved (1 pound unshelled)

Directions:
Directions:
Preheat oven to 225º.
Beat egg white until stiff. Gradually add brown sugar and whisk smooth.
Stir in vanilla and pecan halves.
Drop by teaspoon, one at a time, onto well-greased cookie sheet.
Bake until light brown, about 1 hour.
Remove from oven.
Cool
