1/4 c. flour
1/2 t. salt
1/4 t. black pepper
3 T. butter
4 tilapia fillets (about 1 1/2 lbs.)
2 T. capers, drained & rinsed
1 lemon

Directions:
Directions:
Combine flour, salt & pepper in a gallon-size plastic bag. Shake to mix well. Melt butter in a large skillet. Add fillets to bag one at a time and shake to coat with flour. Cook fillets on medium heat until lightly browned, about 5-7 minutes per side. Remove fillets from pan and sprinkle with lemon and capers. (4 servings)
