Cream Pie

1/4 c. cornstarch (or 8 tbsp. flour)
2/3 c. sugar
14 tsp. salt
2 c. milk - scalded
3 slightly beaten egg yolks
2 tbsp. butter
1/2 tsp. vanilla
1- 9 in. pie shell

Butterscotch Pie

Substitute 1 c. brown sugar for 2/3 c. sugar
Increase butter to 3 tbsp

Meringue

3 stiffly beaten beaten whites
6 tbsp. sugar

Directions:
Directions:
Mix cornstarch, sugar and salt, gradually add milk. Cook in double broiler until thick, about 10 minutes, stirring constantly. Slowly add small amount of hot mixture to egg yolk, then stir into remaining hot mixture. Cook 5 min., cool and add butter and vanilla. Pour into cooled shell, spread with meringue and bake at 350º until meringue is golden.
