2 3 oz. packages of lemon gelatin
2 c. boiling water
1 c. cold water (or equivalent in ice cubes for more rapid set)
1 18 oz. can ready-to-serve vanilla pudding
2 large UNPEELED red apples, cored and diced
1/2 - 3/4 c. celery, finely chopped
OPTIONAL: 1/2 c. chopped walnuts

Directions:
Directions:
Place gelatin in boiling water until dissolved.
Stir in cold water or ice.
Chill until partially set.
Combine chilled gelatin and pudding; mix 2 minutes on medium speed until smooth
Chill until mixture mounds with spoon (Watch!)
Fold in apples, celery, walnuts
Pour into 7-8 c. ring mold
Refrigerate overnight.
Garnish as desired
