1 pack of tortilla shells
1 lb chicken breast
taco seasoning
1 can vegetarian refried beans
2 c shredded Mexican cheese

Directions:
Directions:
Bring a pot of water to a boil. Put chicken in boiling water, reduce heat to simmer and simmer until fully cooked. Remove chicken and allow to cool 5 minutes. Shred chicken, sprinkle with taco seasoning (to taste). Spread refried beans on tortilla shell, add as much chicken mixture as preferred, top with shredded cheese. Roll shells up and wrap in foil.
When ready to reheat, bake in 425º oven for 15-20 minutes.
