3 eggs
2 c. sugar
1 c. oil
2 c. unpeeled grated zucchini squash, fully packed
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. chopped walnuts or pecans
3 tsp. vanilla

Directions:
Directions:
Beat eggs, add sugar gradually, then the oil and squash. In a separate bowl, mix together the flour, baking powder, baking soda, salt and cinnamon till well blended. Add the egg mixture to the dry ingredients along with the nuts and vanilla, till just blended. Divide mixture into two loaf pans and bake at 350º for 1 hour, 15 minutes.

Great Grandma Hyrkas' full name was Eleanor Alice Grangood Hyrkas. Grangood was her maiden name. She was an excellent cook, housekeeper, and seamstress. She also loved to grow flowers in a garden. She gave me this recipe soon after Papa and I got married.
