Chicken breasts (you can use rotisserie chicken, boiled chicken breasts or canned chicken)
celery to taste finely chopped
1/4 cup mayo
1Tbsp white vinegar
1 Tbsp minced onion or to taste (optional)
salt and pepper to taste
grapes cut in half - if in season (optional)

Directions:

Shred chicken or cut in small cubes
Add onion and celery, mayo, vinegar, salt, pepper and grapes.
Mix well
Can be served as sandwiches, on crackers or on a bed of lettuce surrounded by tomato wedges for a brunch

If you are serving brunch or luncheon, this makes a nice salad on a bed of lettuce and compari tomato sliced in quarters or sixths and placed around chicken Or you can even stuff a tomato with salad for brunch or stuff small grape tomatoes as an appetizer.
