1 lb. med. rotini macaroni
1 c. white vinegar
1½ c. sugar
1 tsp. salt
2 c. real mayonnaise (such as Hellmann’s)
13 oz. can evaporated milk
1 large red onion, chopped
2 green peppers, finely chopped (celery may be used)
2 large carrots, grated

Directions:
Directions:
Cook the macaroni, rinse, drain, and cool. Bring vinegar, sugar, and salt to a rolling boil. Cool. Add the mayonnaise and milk. Stir in onion, pepper, and carrots. Mix well. Refrigerate at least 24 hours before serving. Mixture will be soupy, but after salad sets, it will thicken.
