1/3 c. flour
1/2 tsp. salt
1/8 tsp. cayenne pepper
1/2 large yellow onion, cut into 1/4" slices
2 egg whites
1/2 c. plain bread crumbs

Directions:
Directions:
In a wide bowl, combine the flour, salt, and cayenne pepper, mixing well. Separate the onion slices into rings. IN a wide bowl, beat the egg whites lightly. Dredge the onion rings in the flour mixture, dip into egg whites and then coat with the bread crumbs. Arrange rings on a baking sheet sprayed with nonstick cooking spray and bake at 400º for 10 minutes. Turn rings over and bake another 10 minutes. Remove from oven and serve immediately. Makes 2 servings.
