1 c. mayonnaise
1/4 c. ketchup
2 T. prepared horseradish
1 tsp. chopped fresh dill
1/4 tsp. paprika
Canola oil for frying
2 c. all purpose flour
1 egg, lightly beaten
2 tsp. garlic powder
2 tsp. dried oregano
1/2 tsp. freshly ground pepper
1/8 tsp. cayenne pepper
1 bottle of beer (12 oz.)
3 large onions, preferably Vidalia, about 3 lbs. cut into 1/4" thick rings, separated

Whisk together mayonnaise, ketchup, horseradish, dill and paprika; reserve. Clip deep frying thermometer to side of heavy, deep pot. Add 2" of oil to pot; slowly heat oil to 350º. While oil is heating, in large bowl, whisk together flour, egg, garlic powder, oregano, salt, pepper and cayenne. Gradually whisk in beer, stirring until thick batter forms. Add onion slices to batter. Using tongs, add onion rings, in batches , to hot oil; fry 1-2 minutes or until golden brown, turning halfway through cooking. Cook onion rings in batches, or oil won't stay hot and onion rings will be soggy, rather than crisp. Using tongs, remove fried onions to rack or paper towels to drain. Serve hot with mayonnaise sauce. Makes 4 servings.
