2 lbs. cross rib roast
2 T. balsamic vinegar
2 T. minced garlic
2 tsp. dried thyme
1 tsp. dried rosemary
1 T. salt
1 tsp. pepper
1 T. olive oil

Directions:
Directions:
Brush roast with balsamic vinegar. Make a paste with remaining ingredients and apply to meat. Roast meat at 450º for 15 minutes. Reduce heat to 350 and cook for 40-60 minutes, or until internal temperature reaches 125º. Remove from over; cover loosely with foil and let stand 15-20 minutes.
