Meat from the head, feet, tongue and heart of a pig.
Salt to taste.
1 T. lemon juice
1 T. vinegar
1 cup minced onion
2 T. butter
1 t. powdered bay leaf
1 t. sage
¼ t. mace ¼ t. red pepper
1 t. black pepper

Directions:
Directions:
Boil pork in water with salt, lemon juice and vinegar. Cook 4 hours, remove meat and save water. Grind meat; cook onion in butter till tender, add ½ cup meat juice and all seasonings. Cook slowly for 20 minutes add meat and remaining juice. Simmer 20 – 25 minutes, pour into shallow pan and place in cool place to congeal. Serve with crackers
