Stew:
Chop fennel
Onion
Tuscan kale
1 can rinsed /drained cannelloni beans
28 ounce diced tomatoes
Italian Turkey Sausage
S & P

Sandwich: Eggplant and Portabella mushroom sandwiches
4 slices eggplant
4 portobella mushrooms
flour
beaten egg w/ milk or water
Panko Breadcrumbs
hunk Gruyere cheese
Sandwich Bread
tomato basil sauce
Arugula

Directions:
Directions:
Stew:
Stir together finish in oven 375* 45 minutes
Grill Italian turkey sausage… Slice place on top of stew.... Serve

Sandwich:
Dredge eggplant and portobella in seasoned flour
Dip in egg
Coat with Panko
Place on sheet pan
450° oven for 20 minutes

Grate Gruyere cheese (Freeze 1st)
Grill bread slices with a little olive oil
Top bread with tomato basil sauce
Mushroom on top Gruyere cheese on top of that
Top with arugula then with eggplant
Tomato basil sauce
Cut in half… Pick up and enjoy
