3 c. fresh or frozen sweetened sliced peaches
1 tsp. grated lemon peel
1 Tbsp. lemon juice
2 1/2 c. quick cooking tapioca
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
6 Tbsp. butter
1 beaten egg
1/3 c. milk
3/4 c. sugar
1/2 c. water
3 Tbsp. butter

In greased 2qt. casserole, combine 3 c. fresh or frozen sweetened sliced peaches, 1 tsp. grated lemon peel, 1 Tbsp. lemon juice and 2 1/2 c. quick cooking tapioca. Sift together 1 1/2 c. flour, 2 tsp. baking powder and 1/4 tsp. salt. Cut in 6 Tbsp. butter until it resembles coarse crumbs. Combine 1 beaten egg with 1/3 c. milk and stir into flour mixture just enough to moisten. Drop by spoonfuls over peaches. Combine 3/4 c. sugar, 1/2 c. water and 3 Tbsp. butter and bring to boil. Pour over batter. Bake at 375º for 45 minutes or until topping is done.
