Half dozen hard boiled eggs, chopped
2 pounds lean ground round. Add sweet basil to meat if desired
2 packages frozen spinach, thawed and drained
2 pounds shredded mozzarella or Italian cheese mix
2 packages (pounds) large shells
Medium onion
2 cans tomato sauce
1 small can tomato paste

SAUCE:
Saute onion, garlic, if desired, in a bit of olive oil.
Cook ground round.
Drain.

Add two cans of tomato sauce and paste.
Add two cups of water and stir.
Bring to boil and then let simmer for two hours.

In a large bowl, mix meat, cheese, egg and well drained spinach.
Cook shells per package, cook al dente. Drain and let dry.

Stuff shells with mixture.
Take baking dish, line with sauce.
Set stuffed shells in dish.
Cover shells with additional sauce and cheese.

Cover dish with foil.
Bake at 350º for 20 minutes.

Do not overcook. You can double or triple the recipe.
Shells freeze beautifully and make an ideal instant meal for future dinners.
