3 pounds of bone-in, skin-on Chicken Thighs and/or Breasts
Salt and Pepper
2-3 whole heads of Garlic (40 cloves) peeled
Olive Oil
1 1/4 Cup of dry White Wine (can substitute with Chicken Stock and 1 tsp of Lemon Juice).
6 large sprigs of Thyme

Trim and salt the chicken.
Peel the garlic cloves.
Brown the chicken in 1 tbsp. of olive oil on all sides about 2-3 minutes per side. Remove from pan when browned.

Add the garlic to the pan and saute until golden brown. About 4 minutes.

Add the wine (or broth) and the thyme. Bring to a boil. Add the chicken pieces skin-side up. Reduce heat to medium low.

Cover the pan and simmer until the chicken is cooked through, about 20-25 minutes.

Season to taste with salt and pepper.

You can thicken sauce with a little flour or corn starch or heavy cream.

You can serve over rice, noodles or mashed potatoes.
My daughter-in-law, Michelle Santiago makes this and it is delicious. The sauce it makes is wonderful. I made it with both broth and 1/4 cup of white wine and it worked well. Add a little heavy cream to make a creamier sauce.
