1T olive oil
6 oz spinach
6 T flour
2 c cottage cheese
2 c shredded cheddar cheese
6 eggs
2 T melted butter
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
Preheat oven to 350 degrees.
Oil 9 inch pie plate or 8-inch square pan
Sauté spinach in oil until wilted (about 20 seconds). Lightly beat eggs in bowl, add flour and then rest of ingredients, then fold in spinach last.

Bake 1 hour, cool 15 minutes before serving.

DOUBLE FOR LARGE RECTANGLE SERVING DISH.
