1 egg
½ tsp. nutmeg
1¼ tsp. salt
½ tsp. pepper
1 Tbsp. parsley
1½ lb. ground beef
1/3 c. dry bread crumbs
6 oz. Swiss cheese, cut in ½" cubes
2 Tbsp. oil
3 med. onions, chopped
1 46oz. can tomato juice
8 oz. uncooked med. egg noodles
¼ tsp. thyme

Beat egg, nutmeg, salt, ¼ tsp. pepper. Add parsley, beef and bread crumbs. Mix. For each meatball, roll 2 Tbsp. meat mixture around cheese cube. Heat salad oil in 4 qt. pot. Brown meatballs. Saute onions in drippings. Add tomato juice, bring to boil. Add noodles gradually so liquid continues to boil. Stir in meatballs, thyme and remaining pepper. Cover and simmer for 20 minutes.
