One pound of fresh or canned Lump Crabmeat (Backfin may also be used)
2 tsp. of finely chopped onion
1/3 cup of seasoned bread crumbs
1 egg, beaten
1 or 2 T. mayonnaise
1 T. fresh parsley, chopped
1 tsp. lemon juice
1 tsp. Worcestershire sauce
1 tsp. Old Bay Seasoning
1/2 tsp. garlic salt
Salt and pepper

2 T. Butter to fry the crab cakes.

In a 2 qt. bowl, mix crabmeat together with other ingredients in the order given. Seasoning may be adjusted according to your taste and preference. Melt a few tablespoons of butter in a skillet. Form crab mixture into patties -- about 5 patties per pound of crabmeat. (That is, if you have resisted eating some of the crabmeat in the process.) Cook over medium heat for about 10-12 mins. turning to brown both sides. Turning only once, if possible.

Voila! Enjoy with your favorite sides, i.e. french fries and salad.

Growing up, I never realized how amazing Maryland Crabs were. It was not until I was introduced to them by the Davis and Puddy families that I grew to love crab meat made into almost any kind of meal. I never acquired the love for "picking" crabs that most of the family has, so this was my resolve. Over the years I have tried and adjusted many recipes until I created this one that I love to share, and we all enjoy. ~Kathy
