¾ pound ground beef
¾ pound ground pork
1 tablespoon kosher salt
½ teaspoon ground black pepper
1 garlic clove, minced
2 large eggs, lightly beaten
1 cup Parmigianino Cheese, finely grated
1½ cups breadcrumbs, plain/dry
1 tablespoon fresh flat leaf parsley, chopped
¼ cup fresh basil, chopped
1½ cups water
1 garlic clove, lightly smashed
1 cup olive oil

Break up the ground meat into a large bowl. Add salt, pepper, minced garlic, eggs, grated cheese, breadcrumbs, parsley, basil and water. Mix with your hands until combined. Shape into large, even balls approximately 2½ to 3 inches in diameter. In 10-inch nonstick skillet heat the olive oil and smashed garlic clove over medium heat (there should be enough oil to cover half of the meatball-if using a bigger pan, add oil). When the garlic is lightly browned the oil should be hot enough to start frying. Gently fry the meatballs until lightly browned on bottom half (about 5-6 minutes) then turn over and fry the other half for another 5-6 minutes. Drain the meatballs on paper towels to soak up excess oil. Add browned meatballs to your marinara sauce and simmer for at least 30 minutes.
