1 package (3 cups) fast-cooking long-grain and wild rice mix
½ cup onion, chopped
½ cup celery, chopped
1 (8 ounce) can sliced water chestnuts, drained
2½ cups cooked chicken, cubed
1½ cups shredded cheddar cheese
1 can cream of mushroom soup
1 cup sour cream
½ cup milk
¼ teaspoon salt
¼ teaspoon pepper
¼ cup breadcrumbs
½ cup shredded cheddar cheese

Preheat oven to 350°F

In aluminum pan combine rice, vegetables, chicken and 1½ cups cheese. Mix together soup, sour cream, milk, salt and pepper and stir into rice mixture. Top casserole evenly with breadcrumbs and cover with foil. Cover and bake at 350°F for 30 minutes. Uncover casserole and bake 55 minutes more. Sprinkle with remaining ½ cup cheddar cheese, and bake 5 more minutes.
