2 egg whites
1/8 tsp cream of tartar
1/8 tsp salt
1/8 tsp peppermint extract
1 cup sugar
green food coloring
1 6 oz pkg chocolate chips

Directions:
Directions:
Beat egg whites and cream of tartar until stiff. Add salt and extract. Gradually add sugar and beat until thick. Add food coloring (to the shade of green that you want) and chocolate chips. Drop by spoonful on parchment paper covered cookie sheet. Bake at 250 degrees for 15 minutes. Turn off oven and leave cookies in the oven until they have completely cooled.
