Mom's Potato Salad Recipe

10 good size potatoes
1/4 c white vinegar
1/4 c vegetable oil
1/2 c Hellman's Mayonnaise
1 tsp Salt
1/2 Tsp pepper
1/2 c celery - fine dice
1/2 c white onion - fine dice
chopped parsley

Directions:
Directions:
Boil potatoes to fork tender. Let potatoes cool to the touch (this is the secret to the salad's success)
Slice potatoes - do not mash (try to keep slices whole)
While potatoes are still warm, add vinegar and gently fold - then add oil and gently fold again. (Important these seps be done individually)
Add diced onions, celery, salt and pepper gently fold
Lastly, add mayo, gently fold, garnish with chopped parsley or chives.

Cover with plastic wrap and take to the picnic.
Best flavor is at room temperature
