2 C. all-purpose flour
1 tsp. salt
1 C. shortening
6-7 T. cold water

Mix in a mixing bowl together flour and salt. Cut in shortening with pastry blender or fork until pieces are the size of small peas. Add water and mix with spatula until all is moistened. Divide dough in half. Form each half into a ball.

On a floured surface, flatten one ball of dough with hands. Roll dough from the center to edges, forming a circle about 12 inches in diameter. Fold over gently and lay on a 9-inch pie pan. Ease pastry into pie plate being careful not to stretch pastry.

For top crust, roll remaining dough. Lightly scatter a little sugar on bottom crust. Fill pastry in pie plate with desired filling. Lightly scatter a little sugar. Put 5 thin slices of butter over top of filling. Place top crust on filling just as you did bottom crust. Pinch edges together. Bake as directed in individual recipes.
