For the crust:

2 whole eggs
1 egg white
2 TBSP coconut flour
2 tsp pure maple syrup
½ tsp cinnamon
½ tsp vanilla extract

For the toppings:
1-2 tbsp creamy peanut butter or nut butter of your choice
1 ripe banana, sliced
Optional toppings of choice (hemp seeds, cacao nibs)

Directions:
Directions:
Heat a medium skillet on low with butter or oil.
Whisk together the eggs until opaque.
Add the remaining crust ingredients and whisk until smooth.
Pour batter into hot pan and cook for 3-5 minutes, or until bubbles appear.
Flip and cook for another 2 minutes, or until set.
Top with peanut butter, banana, and toppings.
