Ingredients: 1 dozen hard-boiled eggs (Makes 24 halved Deviled Eggs) Cooked Dressing consisting of: 1 Egg 1 c. sugar 2 Tbsp. flour 1 Tbsp. dry mustard 1 tsp. salt
Paprika for decoration.

Directions:Place 1 dozen eggs in cold water. Bring to a boil for 8-10 minutes. Drain and immediately place in iced cold water. This does two things, stops the eggs from continuing to cook and creates a membrane "sweat" on the hard-boiled egg that makes peeling easier. Leave in water 5 minutes.
Peel eggs and carefully cut eggs in halves. Take out the hard yellow yolks and place them in a mixing bowl. With a fork, break up the yolks into finely crushed pieces. Set aside.
Dressing: Mix dry ingredients together. Add egg and beat until smooth. Boil 3/4 cups water and 1/4 cup vinegar on stove and pour on mixture. Return to stove and cook until thick. Let cool. Add to crushed egg yolks. You can add more vinegar or sugar to taste.
Fill egg whites with the mixture either by spooning in the mixture or piping it in for a more elegant presentation. Decorate each half with a sprinkle of paprika. Store in refrigerator. |

Notes: My Mammaw (Grandmother Smith) used to make these eggs when I was little for picnics with our family. A picnic could be anywhere there was a place to stop, get out and eat along the roadside whether it be from a station wagon tail gate or at a spot which had a real picnic table.
