4½ qts (18 c.) cubed or shredded zucchini
46 oz canned unsweetened pineapple juice
1½ cups bottled lemon juice
3 cups sugar

Peel zucchini and either cut into ½-inch cubes or shred. Mix zucchini with other ingredients in a large kettle and bring to a boil. Simmer 20 minutes. Fill pre-heated jars with hot mixture and cooking liquid, leaving ½-inch headspace. Adjust lids and process in boiling-water canner.
Process pints or ½ pnts 20 minutes (adjusted for altitudes -1001 ft. to 6000 ft).

To pre-heat jars, fill with very hot water and set aside just before the mixture is ready to remove from heat. Or fill with hot water and set in a warm oven to keep them warm. Using un-heated jars may result in hot/cold shock and break the jar and cause injury from the hot liquid.
