CAKE:
1 ⅛ c. sifted whole wheat flour (I use white)
2 tsp. baking powder
½ tsp. salt
¾ c. raw sugar (or white)
¼ c. shortening
1 egg
½ c. milk
1 tsp. vanilla

SAUCE:
2 T cornstarch
1⅓ c peach juice drainee from canned peaches
⅓ c. water
¼ tsp. cinnamon
⅛ tsp. cloves
⅛ tsp. nutmeg
2 T butter
2 T. lemon juice
2 c. sliced peaches (I can/bottle mine sliced)
⅛ of salt

Sift dry ingredients together. Add Shortening, egg, milk and vanilla. Beat 2 minutes with electric mixer. Pour into 8x8" pan. Bake 350º F for 35 minutes. Serve warm with Spicy Peach Sauce.

SAUCE:
Blend cornstarch and peach juice. Add water and spices and cook until thick. Add butter, lemon juice, and peaches. Serve warm on Cottage pudding, white or yellow cake.

I usually double the cake or use a regular cake mix and even triple the peach sauce so I can use plenty when I serve this.
