8 to 10 eggs
4 oz. butter
1 T. Cream
1 T. water
salt and pepper

Directions:
Directions:
Separate the white and yolks of eggs in two bowls. Beat the whites until stiff.
Beat the yolks thoroughly with water.
Put butter in hot pan: when butter is hot but not burned add egg yolks, pepper and salt.
When eggs thicken mix in cream and beaten whites
With fork pull the edges toward center of pan as they thicken. Repeat until all liquid is used.
Fold the Omelette and serve on hot platter: garnish with parsley.
