2 head cauliflower
1 qt. pearl onion
1 qt. pickling cucumber
1 1/2 cups salt
3 qts. water, cold
1/3 cup mustard powder
3/4 cup flour
4 cups brown sugar
2 tsps tumeric
1 qt. white vinegar
1/2 tsp. alum
1 tbsp. mustard seeds

Cut cauliflower into small florets. Slice cucumbers to desired thickness. Combine vegetables.

Make a brine of salt and 2 quarts of water. Pour over the vegetable and let stand overnight. Drain in the morning.

Combine dry mustard, flour, sugar, and tumeric; add a little of the remaining water. Mix to a smooth paste; slowly stir the rest of the water. Add vinegar and spices. Bring this mixture to a boil, boiling for 5 minutes. Stir in the vegetables and bring to a boil again.

Pack at once into hot, sterilized jars. Seal immediately.
