2 12oz. packages of breakfast sausage links
1 30 oz. package of country style hash browns
9 eggs
3 c. milk
1 1/2 tsp. ground mustard
1 tsp. salt
1/2 tsp. pepper
2 cups (8 oz.) shredded 4 cheese Mexican style cheese
1/2 c. diced sweet red pepper
1/3 c. thinly sliced green onion
2 c. salsa or picante sauce

Pre-heat oven to 375ºF. Cook sausage according to package directions. Cool slightly and slice into 1/4 inch coins. In a large bowl, combine the eggs, milk, mustard, salt and pepper. Add the hash browns, sausage, cheese, red pepper and green onion; mix well. Pour into a greased 9 x 13 x 2" baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake uncovered at 350ºF fir 65-70 minutes or until set and golden brown and an internal temperature of 165ºF is reached. Let stand 10 minutes before serving. Serve with salsa if desired.
