1¼ cup flour
¼ teaspoon salt
¼ cup cold butter, cubed
¼ cup cold lard, cubed
2 tablespoons ice water
4 teaspoons sour cream

Filling
⅓ cup melted butter
¾ cup brown sugar
½ teaspoon salt
½ cup maple syrup
2 eggs
vanilla
1 tablespoon apple cider vinegar
½ cup walnuts, chopped
¼ cup currants
¼ cup golden raisins

Note: you can substitute chocolate chips for nuts and fruit.

Whisk together flour and salt. Cut in cold butter and lard. Whisk together ice water and sour cream. Drizzle over flour and toss with fork. Add more water if necessary. Cover and refrigerate for 30 minutes. Roll out pie dough and cut into 12, 4-inch circles; fit dough circles into muffin cups. Set aside in fridge until ready to fill.

If using raisins:
Place raisins in a small bowl and cover with hot tap water; let stand on the counter for 30 minutes.

Preheat oven to 350°F

In a large bowl, using a wooden spoon, mix together the melted butter, brown sugar, salt and maple syrup; stir well until sugar is dissolved and butter is creamed. Add egg, vanilla, and apple cider vinegar. Mix well.

Drain raisins. Combine raisins, walnuts, and currants in small bowl.

Retrieve tart shells and divide raisins equally into all shells. If you are using chocolate chips, add them now. Fill each muffin cup with ¼ cup filling. Bake at 350ºF for 20-25 minutes.
