1 pound sweet Italian sausage, casing removed or 1 pound regular sausage
6 tablespoons unsalted butter
1½ cups (1 large) onion, chopped
1½ cups (4 medium) celery stocks, chopped
½ teaspoon dried sage
½ teaspoon thyme
½ teaspoon marjoram
½ teaspoon black pepper
½ cup fresh parsley leaf, chopped
2 cups toasted pecans, chopped
1 cup apple, chopped
1 teaspoon salt
12 cups dried French bread, cubed
1 cup chicken stock
3 large eggs, lightly beaten

Directions:
Directions:
Cook sausage in a large skillet over medium heat until brown (about 10 minutes). Transfer sausage to a large bowl. Discard fat and add butter, onion, and celery to the pan. Cook 6 to 7 minutes or until soft. Add dried herbs and pepper and cook for one additional minute. Add the onion mixture to the sausage in the bowl. Add parsley, pecans, apples and salt; mix to combine. Add the bread cubes. Whisk the stock and eggs together in a small bowl and pour over the sausage mixture. Toss to distribute. Stuff the turkey. Whatever is leftover you can put into a small pan and bake.

NOTE: You may want to add more sausage or apples to this recipe. You may also want to omit or change the nuts to meet your desired taste.
