2 tbsp. vegetable oil
1 large onion, chopped
1/2 tsp. garlic powder
1 lb. ground beef
1 15 oz. can tomato sauce
1 12 oz. can whole kernel corn, drained
1 c. chopped black olives
1/2 tsp. salt
2 tsp. chili powder
2 c. grated Monterrey Jack Cheese
Topping:
3/4 cup yellow cornmeal
1/4 tsp. salt
2 c. water
2 tbsp. oil

Directions:
Directions:
Heat oil in 12 inch skillet. Add onion and garlic powder. Saute for 2 minutes, stirring occasionally. Add ground beef and brown till done, drain excess fat. Add tomato sauce, corn, black olives, salt and chili powder. Simmer uncovered for 15 minutes. Add cheese and stir until cheese is melted. Pour into 11 inch pie plate.

Heat Oven to 375º

Combine cornmeal, salt and water in medium size sauce pan. Cook over moderate heat, stirring constantly until thickens. Stir in oil. Arrange cornmeal mixture over meat. Bake for 35 minutes.

Optional: in last 10 minutes top with a little grated cheddar cheese.
