Crumbled cornbread (from recipe in this book), or 1 (16 oz.) pkg dry corn bread mix, prepared per directions)
2 tbsp butter
1/2 c. chopped celery
1 small onion
2 eggs, beaten
2 c. chicken stock (broth)
2 tbsps. dried ground sage
salt and pepper to taste

Directions:
Directions:
Prepare the corn bread (or dry mix) according to directions. Cool completely and crumble.

Preheat oven to 350º F and grease a 9 x 13 inch baking dish.

In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.

In a large bowl, combine the celery,onions, 3 c crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste. Mix well.

Place into prepared dish and bake at 350º for 30 minutes.

This can used for Thanksgiving with Turkey. Or you can add some cut-up cooked chicken before baking and serve as a main dish.
