"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
4 c. sugar
1 pint Winder Whipping Cream
2 large Symphony Toffee/Almond Bars (16 oz) or your favorite candy
2 cubes Winder Butter

Directions:
Directions:
In large pot mix the sugar and cream. Stir well and bring to a boil. While boiling add two sticks of butter. (Do not touch the side or bottom of pan while stirring in the butter.) Boil to the soft-ball stage (230º). Take off stove, and add the Symphony Bars and beat in with an electric mixer. Pour into a greased pan and chill for 5 to 6 hours.

This makes a large batch. I usually pour it into a buttered or sprayed 9X13" glass cake pan.

Personal Notes:
Personal Notes:
I have affectionately called this "Election Fudge." I am the Chief Deputy Treasurer for Box Elder County. I work directly under the Treasurer, who is an elected official. I usually bring this fudge to the Republican Convention or other Meet and Greet events, and we serve it at the Treasurer's Table. Our table is very popular, and this fudge is becoming famous! Yes, I believe it has helped win the election!!
This is also the fudge I bring to the Bruderer Reunion and donate to the Raffle Table. I will be bringing it again this year!! Good luck, everyone!!
