Directions:
Place sugar in a saucepan; add water and bring to the boiling point. Remove the scum from the surface. Cover and boil for 4 minutes to allow the condensing steam to clear any crystals of sugar from the sides of the pan. Boil gently for 25 minutes. Then remove from heat. Allow to cool and store in a jar for use in making bonbons.

How to clarify the stock syrup. After making the syrup in the above manner pour it in a steady stream over stiffly beaten egg whites, allowing to 1 pound of sugar. Return to pan and simmer until the whites coagulate and rise to the surface; strain.
