1 Stick (1/2 c.) butter or margarine
6 tbsp. flour
1/2 tsp. chili powder
1/2 tsp. Paprika
1/2 tsp. mustard
1/2 tsp. garlic powder
1/2 tsp. cumin (optional - I don't usually add it)
2 c. milk (I use Skim milk)
8 oz. Velveeta Cheese
1 Jalapeno Pepper (to taste - I usually use a little juice of bottled/canned mild jalepena's because Papa doesn't like it spicy)

In microwave oven melt margarine on medium power about 2 minutes. Stop and check during cycle. Add more time if needed.

Stir in the flour till totally absorbed into the butter. Add in the chili powder, paprika, mustard, garlic powder and optional cumin powder and stir till blended. Add in the milk, Velveeta cheese and optional jalapeno peppers. Cook in Microwave on high at three minutes intervals, stirring to keep from lumping. It is done when all the cheese is melted and it is the desired consistency. To serve, spoon over tortilla chips. --YUMMY!

Options: Top with lettuce and taco meat, or add cooked ground beef to the cheese sauce for a meatier dish.

This may be prepared on the stovetop in large saucepan over medium heat.
