3 c. flour
2 c. zucchini
1 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
1 c. granulated sugar
1/2 c. applesauce or egg substitute
1/3 c. vegetable oil
Zest of 1 orange
1/2 tsp. vanilla
1 Tbsp. orange juice
1/3 c. walnuts or raisins

GLAZE:
1/2 c. powdered sugar
2 Tbsp. orange juice
1/4 tsp. zest

Preheat oven: 350º
Bake: 40 min. or until toothpick clean.

Wash and dry zucchini-using a box grater-grate 2 c. and set aside.
Sift flour, salt, baking powder and baking soda. Mix well with a whisk and make a well in the center of the mixture.

Wash and zest the orange.

In another bowl-mix the egg substitute or applesauce, orange zest, juice, vanilla, oil and sugar until combined- then add to flour mixture-folding gently until combined.

Fold in the zucchini (and walnuts or raisins-if using) and split the batter between the 2 greased loaf pans.

Bake as directed-prepare the glaze: mix the remaining orange juice and
1/2 c. powdered sugar in a small bowl-add remaining zest and stir until smooth.

Cool the bread for 10 min. in the pans, then remove-place on a wire rack with a large pan or plate below it to finish cooling.

While the bread is still hot-spoon half of the glaze on top of each loaf-cool completely before serving.
