Filling:
½ lb. pot cheese (or small curd cottage cheese)
½ lb. farmer cheese
Small package cream cheese
1 egg
2 tbl. Sugar
Combine above ingredients to make the filling.

Batter - Combine the following ingredients in a blender
3 eggs
¾ cup flour
1 cup water

Directions:
Directions:
Heat about a tablespoon of butter in a small frying pan and toss the melted butter into the batter mixture
Pour mixture back into frying pan until a thin coating has set,
Pour the excess back into the blender to reuse.
Heat the batter until the edges come off the pan easily and place the (pancake) onto a sheet of wax paper.
Continue until you have enough pancakes for your cheese mixture.
Drop small spoonfuls of cheese mixture onto the pancake and roll, making sure sides are tucked in.
Fry in butter and lightly brown.

You can freeze the blintzes before you fry them. If you’re going to go through all the work, make enough to freeze. You won’t be sorry.
