1 large soup pot of boiling water
1 tbl salt (you’ll probably have to add more once you taste it)
1 lb carrots
4-6 stalks celery
1 medium onion
8 oz yellow & green split peas mixed

Directions:
Directions:
Add all ingredients to the water, bring to a boil
Lower the heat, cover, and simmer for at least two hours
Using a strainer, remove the carrots, celery & onion and puree. Add the mixture back into the pot.

Dumplings
Mix together 4 eggs with approx. 1 cup flour – drop mixture into the soup using a spoon – small drops
Cover the pot and heat on low until dumplings puff up (approx. 15 min.)

This is the soup that all of our family seems to love and never tire of. It tastes a little different every time you make it, but it's always delicious.
