4 oz. gum arabic
1 cup sugar
3 egg whites
1 cup water
1 tsp. Almond Extract
Melted coating chocolate

Directions:
Directions:
Soak the gum arabic in the water overnight; then strain into a double boiler, add the sugar, and cook until mixture thickens.
Remove from heat and add the almond extract with the stiffly beaten egg whites. Beat the mixture until stiff then pour into a pan which has been dusted with equal quantities of confectioners sugar and cornstarch. Dust top with the cornstarch mixture, let stand overnight, then cut in rounds and dip in chocolate.
