1 1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1 egg
1/4 cup oil

variations: blueberry: 3/4 cup blueberries plus 1/4 cup cinnamon topping
or cinnamon topped : 1/4 cup cinnamon topping
or surprise: 2 tbsp. grape jelly

Preheat oven to 400 degrees.
Mix dry ingredients. Mix liquid ingredients, then combine with dry ingredients. Stir until just moistened, don't over mix. Line muffin tins with paper liners (12). Fill 2/3 full, top with cinnamon topping if desired. Or, can take about 1/2 tsp. jelly or jam on a spoon and press just under the top of the batter for a surprise "filling". Bake in center of oven 15-20 minutes.
