3 cups all purpose flour (I use bread flour)
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 tsp. ground cinnamon
3 eggs
1 cup vegetable oil
3 tsp. vanilla
2 1/4 cups sugar
2 cups grated zucchini (I use fine grate and don't peel)
1 cup walnuts (optional...could also use raisins

Directions:

1. Grease and flour two 8x4-inch loaf pans. Preheat oven to 325 degrees. Sift flour, salt, baking powder, baking soda, and cinnamon together into bowl.
2. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to creamed mixture and beat well. Stir in zucchini and nuts. Pour into prepared pans.
3. Bake 60 to 65 minutes until tester inserted in middle comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan; cool completely.
