14 oz. can artichoke hearts, drained
1 cup toasted walnuts or almonds
1 cup pitted green olives
1 garlic clove, pressed or minced
2 to 3 tbsp.chopped fresh parsley
1 tsp. fresh lemon zest
3 to 4 tsp. fresh lemon juice
1/3 cup extra virgin olive oil
black pepper to taste

Directions:
Toast walnuts 5 minutes @ 350º. Process artichoke hearts, walnuts, olives, garlic, parsley and lemon zest till uniformly minced. Add lemon juice and olive oil and pulse till forms a rough paste. Season with pepper. Best served at room temperature. Store covered in refrigerator.
