5 large russet potatoes
10 slices bacon
1/2 tsp. salt
1/4 tsp. pepper
2 1/2 c shredded cheddar cheese
3 scallions, trimmed and sliced
1/2 c reduced fat sour cream

Directions:
Directions:
Scrub potatoes, pierce with fork. Place on paper towels. Microwave 16 min. In large skillet over medium heat cook bacon till crisp 5 - 7 min.
Position rack 6" from broiler. Line baking sheet with foil. Slice potatoes in half lengthwise scoop out flesh, leaving 1/4 " edge, reserving flesh for another use. Place skins, cut side down on sheet, coat with cooking spray. Broil 4 min. Remove skins from oven. Flip over ( cut side up)Season with salt and pepper. Sprinkle each with 2 tbsp. cheese and 1 slice bacon, crumbled. Top bacon with 2 tbsp. cheese per skin. Return to broiler, broil 3 min. till cheese melts. Top with scallions and serve with sour cream.
