100 g. walnuts
900 g. raisins
450 g. currants
450 g. dates
100 g. almonds
225 g. glazed cherries
225 g. mixed fruit
2-1/2 c. brown sugar
1 lb. butter
10 eggs
3 c. flour
1 tsp. cloves
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. all spice
1 tsp. salt
900 g. jam

In a large roasting pan, mix all fruit and nuts with flour (enough to coat it all). Let stand overnight (approximately 8 hours), mixing occasionally.
Line pans with waxed brown paper and then with waxed paper, leaving about 2 inches over edges of pans. I've used square pans and loaf pans.
In large bowl, using an electric beater, mix butter, brown sugar, eggs and jam. Mix well.
With wooden spoon, mix in dry ingredients and fruit and nut mixture. Spoon into pans. Fill about 1/2 inch from top of pans.
Bake 250º F for 4-5 hours. Leave cakes to cool in pans.
Optional - when cakes are cooled, use a pastry brush to smother tops with rum. Leave the cakes overnight to allow rum to absorb.
