1 1/2 cups bacon, diced
3 cups peeled potatoes, cubed
1/2 cup onion, diced
1/4 tsp marjoram
3 cups beef stock
3/4 cup carrots, diced
3/4 cup celery, diced
1/2 cup leeks, chopped
1 cup heavy cream
salt & pepper to taste

Directions:
Directions:
Saute bacon in stock pot; add potatoes, onions, marjoram &remaining
vegetables & cook over low heat til fork tender, about 30 minutes.
Transfer to food blender & prcess til smooth consistency.
Return to stock pot & add heavvy cream.
Simmer about 5 minutes til heated.
Season to taste & garnish with parsley.

I grew up with a lot of potato dishes. This was a good soup! If you like it a little chunky only process half of the ingredients.
