2 1/2 cups flour
1 cup sugar
1 cup brown sugar
1 1/2 tsps cinnamon
1 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
1 tsp salt
1 tsp soda
1/4 tsp baking soda
2 cups shredded zucchini
1 cup oil
2 tsp vanilla
3 eggs
1 cup pecans or walnurs, coarsly chopped
1/2 cup coconut

CAKE GLAZE:
Blend 1 cup powdered sugar
with 1 1/2 T milk
and 1/2 tsp vanilla
Drizzle over top of cake.

Blend wet ingredients, than add dry ingredients (except for nuts and coconut). Be sure and sift soda & baking powder in flour & mix well into flour seperaate from your liquid ingredients; to avoid an aliuminm taste to your baked good. Combine wet & dry mixtures and beat 2-4 minutes at high speed, till light and mixed well. Fold in nuts and coconut.

Pou into greased and floured Bundt pan or 10" tube pan. Bake in 350º oven for 55-60 minutes.

Cool in pan for 15 mins. turn out onto wire rack to cool. when cooled spoon glaze over cake, Receipe for glaze above.
